Squash soup is one of my favorite soups to order which I also consider as a "comfort soup". This is the first time that I'd make it. Looks like I don't have to order out anymore. :D I made it just the way I like it. :D
Ingredients:
1/2 squash, diced
3 Tbsp butter
1 white onion, chopped
2 cloves garlic, minced
1 tsp ground cinnamon
1 chicken cube in 2 cups water
salt and water to taste
Directions:
Garnish with a swirl of cream or croutons.

Directions:
- In a stock pot melt the butter and saute onions until translucent. Add the garlic and cinnamon.
- When you can smell the spices add the squash and chicken stock.
- Boil until the squash is tender and you can mash it with a fork on the side of the pot. Season with salt and pepper.
- Puree the soup in a blender or an hand-held immersion blender until smooth. If you find the soup too thick, thin with more stock.
Garnish with a swirl of cream or croutons.
