Squash Soup

Squash soup is one of my favorite soups to order which I also consider as a "comfort soup". This is the first time that I'd make it. Looks like I don't have to order out anymore. :D I made it just the way I like it. :D

Ingredients:
1/2 squash, diced
3 Tbsp butter
1 white onion, chopped
2 cloves garlic, minced
1 tsp ground cinnamon
1 chicken cube in 2 cups water
salt and water to taste

Directions:
  1. In a stock pot melt the butter and saute onions until translucent. Add the garlic and cinnamon.
  2. When you can smell the spices add the squash and chicken stock.
  3. Boil until the squash is tender and you can mash it with a fork on the side of the pot. Season with salt and pepper.
  4. Puree the soup in a blender or an hand-held immersion blender until smooth. If you find the soup too thick, thin with more stock.

Garnish with a swirl of cream or croutons.
