No-bake Blueberry Cheesecake

Simply delicious. A new family classic for us.
Estimate cost of ingredients: sub P500 as of Oct 2010.

Ingredients:
Crust:
1+1/4 c graham crackers
1 tsp cinnamon (optional)
1/3 c melted/softened margarine / butter
1 tsp lemon zest (optional)
2 Tbsp sugar

Filling:
1 box (225 g) cream cheese
1/4 c sugar
1 Tbsp unflavored gelatin dissolved in
3 Tbsp fresh milk
1 c cream, chilled
1 c blueberries in syrup



Directions:
  1. Make the crust by mixing graham crumbs, cinnamon, butter and lemon zest. Press on a 9" pie plate, spring form pan, or pyrex dish. Chill to set.
  2. Make the filling: beat cream cheese and sugar until light and well blended.
  3. Dissolve the unflavored gelatin in milk over low heat and add to cream cheese while still warm. Continue beating to blend well.
  4. In a separate bowl, whip cream until stiff and fold into cream cheese mixture.
  5. Pour onto crumb-lined pan. Top with blueberries in syrup. Chill for 4-6 hours.
