I just had to make biscotti after watching 4 shows on the AsianFoodChannel and Lifestyle channel feature this double-baked biscuit. Armed with ingredients from Baker's Depot at WalterMart and some ingredients I had at home, I set off to create my first baked goodie from scratch with my own oven.
Ingredients:
2 cups all purpose flour
1+1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 c butter (1 stick)
3/4 c sugar
1 teaspoon lemon zest
1 teaspoon vanilla extract
2 eggs
1 cup walnuts
Directions:
1. Preheat the oven to 350F (or 325F for non-stick bake ware). Line a cookie sheet with parchment paper, or in my case, Glad Cook 'N Bake paper.
2. Toast walnuts, cool and grind to smaller bits. (I did this by placing the walnuts in a thick plastic bag and whacked at it with a hammer. Wonderful stress relief.)
3. Whisk 2 cups all purpose flour, 1+1/2 teaspoon baking powder and 1/2 teaspoon ground nutmeg to blend.
4. Cream 1/2 cup butter, 3/4 cup sugar, 1 teaspoon lemon zest and 1 teaspoon vanilla extract.
5. Add 2 eggs one at a time until incorporated.
6. Slowly add the flour mixture then stir in the walnuts.
7. Use your hands, lightly floured, to form the dough into a log around 4 inches wide, 13 inches long. Bake about 20-30 minutes just until the dough hardens like a cookie. This really depends on your oven. Take them out and cool on a wire rack for about 10-15 minutes.
8. Transfer your biscotti log to a cutting board. With a bread knife or any serrated knife, cut the log to 1/2 inch slices. For presentation purposes, cut at an angle.
9. Arrange the slices again on the cookie sheet with each slice lying down on its side. Bake for another 10-15 minutes or until golden brown. Let cool on a wire rack before storing or serving.
Serve with hot chocolate or coffee for dipping. Enjoy!
