Last Saturday, September 24, 2005, I held a party at my house with church discipleship group and leadership group friends. Unfortunately, I forgot to take pictures.
Menu for that night was Bravo’s Tomato-Garlic Dip with crackers for appetizer, my Farmer’s Carbonara, Bravo’s Pesto, my Grilled Rosemary Lemon Chicken, Brooklyn Pizza’ Delux and April Mercado’s fruit salad.
There’s a story behind my Grilled Rosemary Lemon Chicken: Dad and I went to the supermarket to buy my ingredients for the party. While going through the aisles I reckoned that having just the pasta dishes won’t be enough. I then thought of something that would go with pesto.
Once again, inspired by watching a lot of Jamie Oliver cooking shows, here’s my successful experiment:
Ingredients:
4 chicken breasts fillets (no skin pls)
Zest of 1 lemon
2 6-inch rosemary sprigs, minced
2 large cloves of garlic, minced
1 tbsp salt
1/4 tbsp pepper
2 tbsp Olive oil
Lemon slices and rosemary sprigs to garnish
Directions:
Combine the lemon zest, minced rosemary, garlic, salt and pepper in a mortar and pestle and whack away. Then stir in some olive oil. Marinate chicken at least 20 minutes before placing on a very hot grill pan.
When done, let the chicken rest for around 2 minutes on some paper towels before into strips. Serve with lemon wedges for guests to squeeze and drizzle on before eating.
