Here's a pasta dish I made for my send-off party held at my house last Friday, August 26, in thanksgiving of my last day of work at Mobile Arts, Inc. The original recipe from a Campbells book we have calls for strips of farmers ham. My twist is substituting the ham for Spam. Yum.

Ingredients:
olive oil
2 cloves of garlic, minced
1 onion, minced
1 can Spam lite, sliced to strips
1 small can of button mushrooms, roughly chopped
250g frozen peas, thawed (you can use less)
1 can Campbells cream of mushroom soup
2 small bricks of 120ml low fat milk
some parsley sprigs, finely chopped
1 teaspoon Italian spice (a blend of dried oregano, basil, rosemary, thyme)
salt and pepper to taste
grated parmesan cheese
Half kilogram of pasta cooked according to packet instructions. (Spaghetti or fettuccini is fine. For more fun, use corkscrew or bow-tie pasta)
Directions:
In a non-stick pan, lightly sear the Spam strips then set aside. In a casserole or pot, sauté onion and garlic in olive oil until onion turns translucent. Add the Spam strips and mushrooms, toss around to cook. Add the peas, Campbells cream of mushroom soup and milk. Stir constantly until the dish comes to a slight boil. Simmer down and add parsley, season with Italian spice, salt and pepper to taste. Serve with cooked pasta topped with parmesan cheese.
Recipe serves 4-6.
